Quick, Easy, Delicious, Finger Salad

 

I don’t like to heat up my kitchen in the summer.  We grill a lot and add in different salads and veggies.  This Finger Salad is hearty with a super satisfying crunch.  I love to make this up for a dinner, then munch on it for lunches or snacks. It’s kid approved (my daughter asked for it for her birthday dinner this year!). And it is always a great hit at BBQ s and potlucks, too!

Of course, you could always cut the recipe in half for a smaller batch.

note:  I usually use olive oil, then if I refrigerate, just pull it out early so the oil will liquefy again.  But sometimes I mix in an oil that is liquid at colder temps,  grapeseed or avocado are good choices.

Finger Salad

for this salad you will need to cut up, in bite sized pieces:

1 head of cauliflower

1 bunch of carrots

1 bunch of celery

Add 2 cans of green olives and

2 cans of black olives

the Marinade:

1 1/2 c. oil I use olive, or a mixture of olive and grapeseed

2/3 c. apple cider vinegar

2 1/2 tsp salt

1 tsp pepper

3 cloves of garlic, minced

1 1/2 tsp. honey or other sweetener

Ingredients
  • 2 cans green olives
  • 2 cans black olives
  • 1 head of cauliflower
  • 1 bunch of carrots
  • 1 bunch of celery
  • Marinade:
  • 1½ C. oil
  • ⅔ C. Apple Cider Vinegar
  • 2½ tsp. salt
  • 1 tsp pepper
  • 3 cloves garlic
  • 1½ tsp honey or sugar
Instructions
  1. Cut all the vegetables into bite sized pieces. Add the olives. Mix up the marinade and pour over the top. Mix all together. Enjoy!
